Ingredients

Serves 8

For 8 disposable round aluminium moulds 9 cm in diameter:

  • 200G BLUEBERRIES
  • 100G UNSALTED GREEN PISTACHIOS
  • 100G SIFTED FLOUR + 20G FOR THE MOULDS
  • 300G CASTER SUGAR
  • 150G BUTTER + 30G FOR THE MOULDS
  • 8 EGG WHITES
  • 2 PINCHES LE GUÉRANDAIS GUÉRANDE SALT

Preparation

  1. Preheat oven to 200°C (gas mark 7)

  2. Rinse blueberries.

  3. Butter and flour the moulds.

  4. Purée the pistachios in a blender. Mix with flour, sugar and a pinch of Le Guérandais Guérande salt.

  5. Melt the butter and leave to cool.

  6. Whip the egg whites to medium stiff peaks with a pinch of salt. Gently fold in the flour, sugar and pistachios. Add melted butter and blueberries. Mix well.

  7. Divide the batter between the moulds and bake for 20 minutes.
