Ingredients
Serves 8
For 8 disposable round aluminium moulds 9 cm in diameter:
- 200G BLUEBERRIES
- 100G UNSALTED GREEN PISTACHIOS
- 100G SIFTED FLOUR + 20G FOR THE MOULDS
- 300G CASTER SUGAR
- 150G BUTTER + 30G FOR THE MOULDS
- 8 EGG WHITES
- 2 PINCHES LE GUÉRANDAIS GUÉRANDE SALT
Preparation

Preheat oven to 200°C (gas mark 7)

Rinse blueberries.

Butter and flour the moulds.

Purée the pistachios in a blender. Mix with flour, sugar and a pinch of Le Guérandais Guérande salt.

Melt the butter and leave to cool.

Whip the egg whites to medium stiff peaks with a pinch of salt. Gently fold in the flour, sugar and pistachios. Add melted butter and blueberries. Mix well.

Divide the batter between the moulds and bake for 20 minutes.
