Home-made flavoured salts: which herbs to choose?

You can very quickly create your own flavored salt usingthe powdered or dried spices found in most kitchen cupboards. A very simple example: curry and cumin, mixed with coarse salt, bring an oriental touch to your chicken or fish dishes accompanied by white rice.
If you're lucky enough to have a window box where fresh aromatic herbs grow, be aware that chopped thyme, chives and sage reveal all their flavors when mixed with coarse sea salt and eaten immediately. Fresh herbs have more flavor than dried herbs, an excellent reason to favor freshly picked herbs for successful flavored salts.
Lust for originality? Salt flavored with rosemary and lavender gives a little taste of summer to all your dishes. Delicious with roast chicken, grilled meats, tomatoes or on a slice of fromage frais.

Home-made flavoured salts: what proportions?
As a general rule, we recommend using 3 to 30 g of spices, dried aromatics, fresh herbs or lemon zest per 100 g of salt, depending on your preferences. We still advise you not to be heavy-handed with spices that are spicy or strong in flavor, and to increase the quantities of spices with milder, more subtle flavors.
How to store and preserve flavoured salts?
Small glass jars do the trick, but they should feature an airtight closure for better preservation of flavored salts. Stored away from light and humidity, flavored salts made from dried spices and herbs will keep for several years. This is not the case for flavored salts made from fresh herbs, which should be consumed immediately to avoid altering the taste of the herbs.
