Summary
Why place a bed of coarse grey Guérande salt on the plancha?
It absorbs fats
Did you know that salt is lipophilic? The coarse gray salt "loves lipids" and absorbs them. Foods cooked on a bed of salt therefore come out less fatty!
The bed of coarse salt doesn't stick
Fragile foods, especially certain fish, are protected by the bed of coarse gray salt. They won't risk sticking to the plancha...which will be all the easier to clean!!
Fine Guérande salt flavors
For even more flavor, use "Le Guérandais" flavored fine Guérande salt. Four delicate flavors of aromatized fine salts have been developed:
- Herbes de Provence :will ideally enrich the seasoning of vinaigrettes, vegetables, grilled meats etc...
- Algae: will delicately perfume fish, shellfish, soups, sauces or even short fish broths.
- Lime zest: will perfume your cooked vegetables, salads or raw vegetables.
