- 2 kg Le Guérandais grey Guérande salt
- 2 egg whites
Serves 4 Preheat the oven to 250°C. Beat the egg whites and mix them with the salt. Add 5 dessertspoonfuls of cinnamon. Coat the bottom of cake tin with salt. Place the apples on top and cover them completely with a 1 cm layer of salt. Place in the oven for 15 minutes. Remove the apples from the oven and leave them to stand for 5 minutes. Break and carefully remove the coarse salt crust. Serve the apples still warm with a salted butter toffee cream.
