For the dough, mix the flour, butter, sugar, egg yolk and a pinch of Le Guérandais Ground Salt until smooth.

Roll out thinly, leave to stand, then shape into a tart base.

Bake at 170°C for about 20 min.

Heat the milk and cream in a saucepan until boiling, then add the chocolate and one egg. Whisk until smooth and pour into the tart shell.

Bake again at 120° for about 10 min.

Sprinkle with Le Guérandais Fleur de sel and serve.
