Ingredients
- 2 filets de dorade
- 150g d'huile neutre
- 1 botte de mélisse
- Herbes fraîches de votre choix
- Fleur de sel Le Guérandais
- Poivre du moulin
Preparation

Lift the fillets from the sea bream and carefully remove the bones.

Blend the oil with the lemon balm without heating, leave to infuse overnight in the fridge, then strain through a sieve.

Slice the sea bream fillet a little thicker (3mm) and arrange attractively on a plate.

Arrange the herbs of your choice, and season with Le Guérandais Flower of Salt, freshly ground pepper and lemon balm oil.

Serve immediately.
