This little salad is quite surprising! A fresh and simple starter. Perfect for using strawberries either early or late in the season, that may be a little less tasty...the Guérande salt will save the day! The salt will also highlight the cucumber's full flavour.
In a small pan, prepare your dressing by heating the vinegar, honey, a little lemon rind and the Guérande coarse sea salt. Leave to cool.
Peel the cucumber with a peeler, then with a melon baller scoop out little balls of cucumber and add them to the dressing.
Remove the leaves from the strawberries and cut them into 4 at the very last minute. In a bowl, sprinkle them with a teaspoon of Guérande 'Fleur de Sel' and leave for 5 minutes.
Fill 4 glasses with the strawberries and cucumber balls, add the lemon thyme and serve!
